Snow, er, Fire Day Part 2

No school again today, and, it looks like at least one of my schools will be closed tomorrow.
This is a very strange, quiet time. I feel so out of it, not being able to teach my classes. Still, i’m trying to keep busy. Last night I made dinner for Ted and myself; a big crock pot of “Slow Cooked Tex-Mex Chicken and Beans” (well we were worried we might need provisions), from Martha Stewart’s Everyday Food magazine. It says it’s a light recipe…
Here are some pics:
The recipe was really simple, basically just throw a bunch of stuff in the crockpot. And, it called for Chipotle Chiles (in adobo sauce– my favorite!).
Naturally, I needed to balance out all of this spiciness with something sweet, so I made Weight Watchers Chocolate Pumpkin Muffins (ok, got inspired after reading Felicia’s fabulous latest food/blog post). They were scrumptious. Get the recipe here (It’s easy! I just substituted chocolate cake mix). And see the pics!
They used real pumpkin puree, and were incredibly moist and tasty! They don’t really need frosting, but I frosted about half of them just for kicks (with a WW Frosting recipe that hardly seemed WW approved…).
Last night I also made a new postcard. I’m not done with it yet, but will put it up when i’m done. In the meantime, here are the two postcards I sent out to my postcard swap partners (I don’t think either of them read my blog, but if they do, sorry to spoil the surprise!).

This one is called “AMC, the Cure-All” (this recipient is an All My Children fan). I had gotten this great Soap Opera Digest Dictionary from the rejected/giveaway section of the school library and it had the coolest info in it. Like who played whom on AMC for how many years–I took some of those names and made that into a flower. I didn’t know that dance/screen legend Gwen Verdon, had been on the show!

I’ve recently gotten hooked on the Everyday Food mag. Martha has been providing us with nearly every meal for the last month or so. Perhaps the slow-cooked chicken is next.
